This is my nose favourite thing.
Like… I just ate a quarter of a pumpkin in one sitting favourite thing.
So, quarter of a butternut pumpkin, diced.
A generous drizzle of olive oil (GOOD olive oil please, you can actually taste the difference, trust me!)
Nutmeg, cinnamon and cummin, a sprinkle of each -as demonstrated below
1 tin of chickpeas, drained and rinsed.
1/4 purple onion
Wedge of lemon.
So, spice the pumpkin, mix in the chickpeas
And chick in the oven for about 20-25 mins at 200 Celsius
When done, top with finely sliced purple onion and squeeze lemon juice over.
Optional: add chicken!
